Rising Stars
Definition
Dying to know what the next avocado toast, or matcha, or ube is going to be (in retail or foodservice?) Now you have another tool to help you do that! Rising stars are the foods and flavors that have most rapidly gained consumer awareness in the last two years, which is highly correlated to growth in consumer affinity. This allows us to tell you which foods and flavors to watch, so that you know what’s coming next and have the time to capitalize on the hottest trends.
Use Case
Rising stars will be vital to your innovation process, because you can look at these foods and flavors in any category. If you're planning farther out or looking to push the envelope, you might look at the rising stars in the earlier stages of the Menu Adoption Cycle (inception or adoption). If you're looking to play it safer with well-established items, you might look at those in proliferation and ubiquity. The rising stars are foods and flavors to keep on your radar because consumers are rapidly becoming aware of them - and they are likely to become increasingly loved as more people try them.
Example
Q: What are rising stars within the proliferation stage of the Menu Adoption Cycle?
A: Mocktails, cold foam, and espresso martinis to name a few!
